Thanks for the help, I may have used the wrong terminology but I was referring to the email notification that the customer was receiving. Is it possible for us to disable the "Assigned to xxx" email?
Since posting this question I've realised that changing the assignee and writing a comment before hitting save might be the best way to go as it will only send one email.

Under "account wide settings", "defaults"...it looks like you can uncheck sending update emails to the assignee.
Always notify assignee of updates
Always send an email to the assignee notifying them of updates to their records regardless of whether 'Notify watchlisted' is checked or not when updates are made
